Ive been doing grab bags the last few months, looking for more ideas. I prep everything Saturday and Sunday for grab and go durning the week. I have found that we eat more fruit and veggies if they are pre prepped, looking for more ideas I rotate weekly but so far I have done
Cucumbers, carrots, green peppers, cauliflower, cantaloupe, oranges, apples, cheese and sausage, raspberries, grapes, strawberries.

Recipe: Rainbow Veggie and Fruit Salad Jar

Ingredients:

  • 1 cucumber, sliced
  • 2 carrots, julienned
  • 1 green pepper, sliced
  • 1 cup cauliflower florets
  • 1 cantaloupe, diced
  • 2 oranges, segmented
  • 2 apples, diced
  • 1 cup cheese cubes (cheddar, mozzarella, or your choice)
  • 1 cup sausage slices (cooked and cooled)
  • 1 cup raspberries
  • 1 cup grapes (halved)
  • 1 cup strawberries, sliced

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Set aside.
  2. Prep the Veggies and Fruits: Wash and chop all the vegetables and fruits according to the listed quantities. Ensure they’re all dry before assembling.
  3. Assemble Salad Jars: Grab several mason jars or reusable containers. Begin by layering the ingredients to create a visually appealing rainbow effect. Start with cucumber slices as the base, followed by carrots, green peppers, cauliflower, cantaloupe, oranges, apples, cheese cubes, sausage slices, raspberries, grapes, and strawberries. Press down gently after each layer to fit more ingredients.
  4. Dressing Application: Once the jars are filled with layers of veggies, fruits, cheese, and sausage, drizzle the prepared dressing over the top of each jar. Ensure the dressing is evenly distributed.
  5. Seal and Store: Seal the jars tightly with their lids and store them in the refrigerator. These salad jars can be made ahead and stored for up to 5 days. The flavors will meld together, making them even more delicious as the week progresses.
  6. Enjoy: When you’re ready to eat, simply grab a jar from the fridge, give it a good shake to distribute the dressing, and enjoy your colorful and nutritious rainbow veggie and fruit salad!

Note: Feel free to customize this recipe with your favorite fruits and vegetables or based on what’s in season. You can also add nuts or seeds for extra crunch and protein
