Every weekend while making pancakes I make- ahead a bunch of mini pancakes to put in a ziploc bag and freeze. During the week, we throw however many we want into the microwave for about 30 seconds and breakfast is ready! Today I used my $6 mini waffle maker (Walmart clearance find!) to make a bunch of toaster- sized waffles to freeze! It will be so easy to grab the toaster and go!
**this is THE BEST waffle/pancake mix— they are always so fluffy and taste great! You just add water, nothing else! I get it at Sams Club for $6.10! 10 lbs of it for a little over $6?! You can’t beat that!

Mini Freezer-Friendly Waffles for Easy Breakfasts

Ingredients:

  • 10 lbs (about 4.5 kg) of your favorite pancake/waffle mix (recommended: the $6 pancake mix from Sam’s Club)
  • Water
  • Cooking spray or melted butter (for the waffle maker)

Equipment:

  • Mini waffle maker
  • Mixing bowl
  • Whisk
  • Ladle or cup for pouring batter
  • Ziploc bags for freezing

Instructions:

  1. Preheat the Mini Waffle Maker:
    • Plug in your mini waffle maker and let it heat up according to the manufacturer’s instructions.
  2. Prepare the Pancake/Waffle Mix:
    • In a mixing bowl, measure out the desired amount of pancake/waffle mix. Since this mix is the best, use about 2 cups for a small batch or adjust according to your needs.
  3. Add Water:
    • Follow the instructions on the pancake mix packaging. Typically, you just need to add water. Gradually mix in water and whisk until you achieve a smooth batter. The consistency should be thick but pourable.
  4. Cook the Mini Waffles:
    • Lightly coat the heated waffle maker with cooking spray or brush with melted butter to prevent sticking.
    • Pour the batter onto the waffle maker, covering the surface but leaving a little space for expansion.
    • Close the lid and cook according to the manufacturer’s instructions, usually for about 3-4 minutes or until golden brown.
  5. Cool and Package:
    • Allow the mini waffles to cool completely on a wire rack. This prevents them from becoming soggy when stored.
    • Once cooled, stack the mini waffles and place them in Ziploc bags, separating layers with parchment paper if needed.
  6. Freeze for Later:
    • Label the Ziploc bags with the date for easy tracking.
    • Place the bags in the freezer. The mini waffles can be stored for up to 2-3 months.
  7. To Reheat:
    • When ready to enjoy, simply take out the desired number of mini waffles from the freezer.
    • Microwave for about 30 seconds or until heated through. Optionally, toast them in a toaster for a crispier texture.
  8. Serve and Enjoy:
    • Serve your mini waffles with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.

Note: Feel free to experiment with additional mix-ins like chocolate chips, blueberries, or chopped nuts for added flavor and texture.
