One of my favorite comfort foods, something me and my mom used to always eat together! And the boyfriends gone at work and it’s raining and windy here so it’s the perfect meal for dinner tonight and beyond cheap.
1 can of while peeled tomatoes – $0.75
And I only used about a cup of noodles maybe a little more from a big box of noodles, the big box was $3-4. So I maybe used $0.50 if that of the box.
Cook noodles, drain, put back in the pot, open can of tomatoes and I tear them into bite size pieces and pour the tomato juice from the can on top, and add salt and a lot of pepper! So good!

Mom’s Cozy Tomato Noodle Delight

Ingredients:

  • 1 can of whole peeled tomatoes (approximately $0.75)
  • 1 cup (or more) of your favorite noodles (about $0.50 from a $3-4 box)
  • Salt and pepper to taste

Instructions:

  1. Boil Noodles:
    • Cook the noodles according to the package instructions until they are al dente.
    • Drain the noodles and return them to the pot.
  2. Prepare Tomatoes:
    • While the noodles are cooking, open the can of whole peeled tomatoes.
    • Carefully tear the tomatoes into bite-sized pieces and set aside.
  3. Combine Tomatoes and Noodles:
    • Pour the tomato juice from the can over the cooked noodles in the pot.
    • Add the torn tomatoes to the pot as well.
  4. Season to Perfection:
    • Sprinkle salt and a generous amount of black pepper over the noodles and tomatoes. Adjust the seasoning to your liking.
  5. Warm it Up:
    • Place the pot back on the stove over low heat. Gently mix the noodles, tomatoes, and seasonings until well combined. Allow it to warm through for a few minutes.
  6. Serve and Enjoy:
    • Once everything is heated and well-mingled, serve your cozy tomato noodle delight in a bowl.
  7. Optional Additions:
    • If you want to enhance the dish, you can add a sprinkle of grated Parmesan cheese on top or a drizzle of olive oil for extra richness.
