Grandson’s Poor Man’s Stew
Ingredients:
- 1 lb ground beef, browned ($1.99)
- 3 large potatoes, cut into large cubes ($1)
- 4 large carrots, cut into 1-inch pieces ($0.40)
- 3 celery stalks, cut into 1-inch pieces ($0.25)
- 1 onion, cut into large cubes ($0.25)
- 1 can of fried roasted tomatoes ($1.50)
- Frozen cut green beans ($1.25)
- 1 box of broth ($2.25)
- Salt and pepper, to taste
For serving:
- Brown and serve rolls ($0.99)
- Tossed salad:
- Lettuce ($0.99)
- Tomato ($0.75)

Instructions:
- Prepare Ingredients:
- Brown the ground beef in a large pot over medium heat. Season with salt and pepper to taste.
- While the beef is browning, prepare the vegetables: cut the potatoes, carrots, celery, and onion as instructed.
- Combine Ingredients:
- Once the beef is browned, add in the potatoes, carrots, celery, and onion to the pot.
- Pour in the can of fried roasted tomatoes and add the frozen green beans.
- Stir everything together to combine.
- Add Broth:
- Pour in the box of broth into the pot. Make sure the broth covers all the ingredients. If needed, add a bit of water to ensure everything is submerged.
- Simmer:
- Bring the stew to a boil, then reduce the heat to low. Let it simmer for about 20-25 minutes, or until the vegetables are tender.
- Serve:
- While the stew is simmering, heat up the brown and serve rolls according to package instructions.
- Prepare the tossed salad by washing and chopping the lettuce and tomato.
