Pickles wedges… all 5 of my kids loved them as did the other 3 kiddos I have most weekends. Lol when you have a bus load of minions it can definitely be challenging and expensive to feed them all. But this was actually cheaper then I figured it would be and the kids loved them.. 😍 😉

Bacon-Wrapped Pickle Delight

Ingredients:

  • Giant dill pickles (enough for each child)
  • Cream cheese (1 block, softened)
  • Shredded cheese (your choice, 2 cups)
  • Bacon strips (1 per pickle half)
  • Toothpicks

Directions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Pickles:
    • Cut the giant dill pickles in half lengthwise.
    • Use a paper towel to pat them dry, removing excess pickle juice.
  3. Cream Cheese Spread:
    • Spread a generous layer of softened cream cheese evenly over each pickle half.
  4. Cheesy Topping:
    • Sprinkle your favorite shredded cheese on top of the cream cheese. Feel free to be as generous as you like; after all, more cheese equals more joy!
  5. Bacon Wrapping:
    • Wrap each cream cheese and shredded cheese-covered pickle half with a strip of bacon. Secure the bacon with toothpicks, ensuring it stays in place during baking.
  6. Bake:
    • Place the bacon-wrapped pickle halves on a baking sheet lined with parchment paper or aluminum foil.
    • Bake in the preheated oven for approximately 12 minutes or until the bacon is crispy and golden.
  7. Serve and Enjoy:
    • Remove toothpicks before serving.
    • Serve these delightful bacon-wrapped pickle wedges as a tasty snack or side dish for your hungry crew of kids.
