Homemade Mixed Fruit Cups

Ingredients:

  • 8-10 fresh strawberries, hulled and sliced
  • 1 jar (15 oz) Mandarin oranges, with juice
  • 1 can (20 oz) diced pineapple, with juice
  • 2 ripe bananas, sliced
  • 1/2 cup fresh orange juice
  • A handful of fresh cherries, pitted and halved (optional)

Instructions:

  1. Prepare the Fruits:
    • Hull and slice the strawberries.
    • Drain the Mandarin oranges, reserving the juice.
    • Drain the diced pineapple, reserving the juice.
    • Peel and slice the bananas.
    • If using, pit and halve the cherries.
  2. Mixing the Fruits:
    • In a large mixing bowl, combine the sliced strawberries, Mandarin oranges, diced pineapple, sliced bananas, and cherries (if using).
    • Gently toss the fruits together to ensure an even distribution.
  3. Adding Citrus Flavor:
    • Pour the reserved juices from the Mandarin oranges and diced pineapple into the fruit mixture.
    • Add fresh orange juice to the bowl.
    • Stir the fruits and juices together until well combined.
  4. Assembling Fruit Cups:
    • Spoon the mixed fruit into individual containers with lids, ensuring each container gets a good mix of all the fruits.
    • If you prefer, layering the fruits can create a visually appealing presentation.
  5. Chill and Store:
    • Seal the containers with lids and place them in the refrigerator for at least 2 hours to allow the flavors to meld.
    • These fruit cups can also be frozen for longer storage. Simply thaw them in the refrigerator before serving.
  6. Serve and Enjoy:
    • When ready to enjoy, grab a container from the refrigerator or let it thaw if frozen.
    • These mixed fruit cups make for a refreshing and healthy snack or dessert.
