Jiffy Cornbread Casserole Delight


  • 2 boxes of Jiffy cornbread mix
  • 1 lb ground hamburger meat, browned and drained
  • 1 bag of frozen mixed vegetables
  • 2 cans of cream of mushroom soup
  • 1/4 cup milk
  • 2 cups shredded cheese (1 cup for topping, 1 cup for meat mixture)
  • Salt and pepper, to taste


  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Jiffy cornbread mix according to the instructions on the box.
  3. Grease a 9×13-inch baking dish and spread the prepared cornbread batter evenly in the dish.
  4. In a large mixing bowl, combine the browned and drained ground hamburger meat, frozen mixed vegetables, cream of mushroom soup, 1 cup of shredded cheese, and milk. Season with salt and pepper to taste. Mix well until all ingredients are evenly combined.
  5. Spread the meat and vegetable mixture over the cornbread batter in the baking dish.
  6. Sprinkle the remaining 1 cup of shredded cheese evenly over the top.
  7. Bake in the preheated oven for approximately 30 minutes or until the top is golden brown and the casserole is cooked through.
