Queso-Taquito Enchilada Bake
Ingredients:
- 1 package of your favorite taquitos (chicken, beef, or vegetable)
- 1 cup queso dip (store-bought or homemade)
- 1 cup shredded Mexican cheese blend
- 1 can (10 oz) enchilada sauce (optional, for extra kick)
- Fresh cilantro, chopped (for garnish, optional)
- Sour cream (for serving, optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Baking Dish: Lightly grease a baking dish with cooking spray or a thin layer of queso to prevent sticking.
- Layer the Base: Spread a thin layer of queso or enchilada sauce on the bottom of the baking dish.
- Arrange the Taquitos: Arrange the taquitos in a single layer over the sauce, ensuring they are snugly packed.
- Cover with Queso: Pour the remaining queso dip evenly over the taquitos. If you want a bit more heat, you can also pour enchilada sauce over the top.
- Bake: Place the baking dish in the preheated oven and bake for approximately 20 minutes or until the taquitos are heated through.
- Add Shredded Cheese: Remove the dish from the oven and sprinkle the shredded Mexican cheese blend over the taquitos.
- Return to Oven: Return the baking dish to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Once out of the oven, let it cool for a couple of minutes. Optionally, garnish with chopped fresh cilantro. Serve the queso-taquito enchiladas with a dollop of sour cream on the side.
