Crazy Crust Fruit Delight Pie
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter or margarine, softened
- 3/4 cup milk
- 1 large egg
- 1 can (21 oz.) fruit pie filling (apple, cherry, peach, blueberry, blackberry, etc.)
- Additional sugar or cinnamon-sugar for sprinkling
Instructions:
- Preheat the Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 9-inch pie plate well and set it aside.
- Prepare the Crazy Crust Batter: In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Add the softened butter or margarine and use a pastry cutter or your fingers to incorporate it into the dry ingredients until the mixture resembles coarse crumbs.
- Create the Batter Base: In the same bowl, add the milk and the egg. Beat the mixture well until you have a smooth batter. The batter will be thick but pourable.
- Assemble the Pie: Pour the crazy crust batter into the prepared pie plate, spreading it evenly along the bottom. Make sure to leave a slight indentation at the center for the fruit filling.
- Add the Fruit Filling: Open the can of fruit pie filling and carefully pour it into the center of the batter, spreading it slightly but leaving a border around the edges.
- Sprinkle with Sweetness: Depending on the type of fruit filling used, sprinkle the top with either granulated sugar or a mixture of sugar and cinnamon. For apple or peach, cinnamon-sugar works particularly well.
- Bake to Perfection: Place the pie in the preheated oven and bake for 35 to 40 minutes or until the crust is golden brown, and a toothpick inserted into the crust comes out clean.
