CHERRY BARS FOR A CROWD

For the Bars:
1 1/2 cups butter, softened
3 cups granulated sugar
1 1/2 teaspoon salt
5 large eggs
1 1/2 teaspoon vanilla extract
1 1/2 teaspoon almond extract
5 1/2 cups all-purpose flour
1 1/2 teaspoon baking powder
2 cans (21 oz.) cherry pie filling

For the Filling:

  • 2 cups cherry pie filling (homemade or store-bought)
  • 1/2 teaspoon almond extract (optional, but it enhances the cherry flavor)

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon almond extract (optional)
  • Sliced almonds for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the Crust: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done using a hand mixer or stand mixer.
  3. Add Dry Ingredients: Gradually add the flour and salt to the butter-sugar mixture. Mix until the dough comes together and forms a crumbly texture.
  4. Press the Crust: Take about two-thirds of the dough and press it evenly into the bottom of the greased baking dish to form the crust. You can use your hands or the back of a spoon to do this.
  5. Add Cherry Filling: Spread the cherry pie filling over the crust layer. If desired, stir in the almond extract with the cherry filling for extra flavor.
  6. Create the Top Layer: Take the remaining one-third of the dough and crumble it evenly over the cherry filling. You can do this by breaking small pieces of dough and distributing them across the top.
  7. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes or until the top is lightly golden brown.
  8. Cool: Allow the cherry bars to cool completely in the baking dish before cutting into squares. This helps the filling set.
  9. Optional Glaze: If you want to add a glaze, mix the powdered sugar, milk, and almond extract (if using) in a small bowl until smooth. Drizzle the glaze over the cooled cherry bars and garnish with sliced almonds if desired.
  10. Serve: Once the glaze has set, you can cut the cherry bars into squares and serve. Enjoy!
