Cheesy Breakfast Egg Rolls


  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage or diced ham
  • Salt and pepper to taste
  • 4 large egg roll wrappers
  • Cooking oil for frying

Optional Filling Ideas:

  • Sautéed vegetables (bell peppers, onions, mushrooms, etc.)
  • Diced cooked bacon
  • Spinach or kale
  • Diced tomatoes


  1. Prepare the Egg Mixture:
    • Crack the eggs into a bowl and whisk them until well beaten.
    • Season with salt and pepper to taste.
  2. Cook the Egg Mixture:
    • Heat a non-stick skillet over medium-high heat.
    • Pour the beaten eggs into the hot skillet, swirling it around to cover the surface.
    • Allow the eggs to cook for a few minutes until set, then flip and cook briefly on the other side.
    • Remove the cooked eggs from the pan and cut into four equal squares.
  3. Assemble the Egg Rolls:
    • Lay out the egg roll wrappers on a clean surface.
    • Place a square of cooked egg in the center of each wrapper.
    • Sprinkle shredded cheddar cheese and your choice of meat on top of the egg.

    • Heat cooking oil in a pan or deep fryer to 350°F (175°C).

  8. Drain and Serve:
    • Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain any excess oil.
