Homemade Beef and Bean Burritos

Ingredients:

  • 1 lb lean ground beef – $5.67
  • 1 30 oz can of refried beans – $2.64
  • 10 count package of flour tortillas – $2.78
  • 1 package of cheddar cheese – $2.22

Total Cost: $13.31 (9 burritos at $1.48 each)

Instructions:

  1. Prepare Filling:
    • In a large pan, season and brown the lean ground beef over medium heat until fully cooked.
    • Drain excess grease from the beef.
    • Add the can of refried beans to the pan, mixing thoroughly with the ground beef.
    • Allow the mixture to heat through until it’s well combined and hot.
  2. Prepare Tortillas:
    • Microwave the flour tortillas for about 15-20 seconds to make them pliable for folding.
  3. Assemble Burritos:
    • Spoon a generous amount of the beef and bean mixture onto the center of each tortilla.
    • Fold the sides of the tortilla over the filling and then fold the top and bottom to create a small burrito.
  4. Cooking Options:
    • For Immediate Consumption (Dinner):
      • Heat a non-stick pan over medium heat.
      • Lightly spritz the pan with olive oil.
      • Place the burritos in the pan and cook for 2-3 minutes on each side or until golden brown.
      • Sprinkle cheddar cheese on top of each burrito after flipping, allowing it to melt.
    • For Freezing (Future Lunches):
      • Once assembled, wrap each burrito individually in aluminum foil.
      • Place the wrapped burritos in a freezer-safe bag and store in the freezer for up to 2-3 months.
