Creamy Rotel Hamburger Pasta
Ingredients:
- 8 oz elbow noodles
- 1 lb lean ground beef
- 1 can (10 oz) Rotel diced tomatoes and green chilies
- 1/4 cup sour cream
- 1/2 stick butter
- 1/4 cup grated Parmesan cheese
- 1 cup shredded Colby cheese
- Seasonings to taste: garlic powder, onion powder, seasoned salt, Italian seasoning
- Sliced bread
- Butter for toasting

Instructions:
- Cook Elbow Noodles: In a pot of salted boiling water, cook the elbow noodles according to the package instructions until al dente. Drain and set aside.
- Brown Ground Beef: While the noodles are cooking, in a separate skillet, brown the lean ground beef over medium-high heat. Break it into crumbles as it cooks. Since it’s very lean, you might not need to drain excess fat.
- Season Beef: Season the cooked ground beef with garlic powder, onion powder, seasoned salt, and Italian seasoning according to your taste preferences.
- Add Rotel and Sour Cream: Stir in the can of Rotel diced tomatoes and green chilies along with the sour cream into the seasoned ground beef. Let it simmer for a few minutes until heated through.
- Combine Noodles and Sauce: Once the noodles are cooked and drained, return them to the pot. Add the butter, grated Parmesan cheese, and shredded Colby cheese to the noodles. Mix until the butter is melted and the cheese is melted and coats the noodles evenly.
- Mix in Sauce: Pour the ground beef and Rotel mixture into the pot with the noodles and cheese. Gently mix until everything is well combined and the noodles are coated with the creamy sauce.
- Toast Bread: While the pasta is finishing, spread butter on sliced bread and sprinkle with garlic powder and Italian seasoning. Toast the bread until golden brown.
- Serve: Serve the creamy Rotel hamburger pasta hot with the toasted garlic bread on the side.
