Creamy Garlic Herb Mashed Potatoes for Two

Ingredients:

  • 1 large russet potato
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 2 tablespoons unsalted butter
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (such as chives, parsley, or thyme), chopped, for garnish (optional)

Instructions:

  1. Prepare the Potatoes:
    • Peel the russet potato and cut it into chunks.
    • Soak the potato chunks in cold water for about 20 minutes to remove excess starch. Then, drain them.
  2. Cook the Potatoes:
    • In a pot, fill with enough cold water to cover the potato chunks.
    • Bring the water to a boil over medium-high heat.
    • Add a generous pinch of salt to the boiling water.
    • Carefully add the drained potato chunks to the boiling water.
    • Cook the potatoes until they are fork-tender, about 15-20 minutes.
  3. Prepare the Mashed Potatoes:
    • While the potatoes are cooking, heat the milk and butter together in a small saucepan over low heat until the butter is melted. Add minced garlic to infuse the milk with flavor.
    • Once the potatoes are cooked, drain them thoroughly and return them to the pot.
    • Mash the potatoes using a potato masher or a fork until smooth.
    • Gradually pour in the warm milk and butter mixture while continuing to mash the potatoes until creamy and well combined. Season with salt and pepper to taste.
  4. Serve:
    • Transfer the mashed potatoes to a serving bowl.
    • Garnish with fresh herbs if desired.
    • Serve immediately while hot and creamy.
  5. Freezing Instructions (optional):
    • Allow the mashed potatoes to cool completely.
    • Portion the mashed potatoes into freezer-safe bags, about 2-3 cups per bag.
    • Seal the bags tightly and label them with the date.
    • Store the bags in the freezer for up to 3 months.
  6. Reheating Instructions:
    • When ready to enjoy the frozen mashed potatoes, remove a bag from the freezer and let it thaw in the refrigerator overnight.
    • The thawed mashed potatoes may appear soupy, but don’t worry.
    • Transfer the thawed mashed potatoes to a microwave-safe container and heat in the microwave for 2 minutes.
    • Stir the mashed potatoes and continue to heat in 1-minute increments, stirring in between, until they are heated through and creamy again.
