One-Pan Paprika Thyme Pork Chops with Lemon Garlic Broccoli
Ingredients:
2 pork chops ($1 each in a family pack from Kroger)
1/4 of a $4 family-size Kroger bag of broccoli
Olive oil
1 tablespoon paprika
1 teaspoon thyme
1 teaspoon onion powder
1 tablespoon brown sugar
Lemon pepper to taste
Garlic salt to taste
Salt and pepper to taste
Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Pork Chops:
Pat dry the pork chops with paper towels.
In a small bowl, mix paprika, thyme, onion powder, and brown sugar.
Rub the pork chops with a bit of olive oil, then generously coat them with the spice mixture.
Prepare the Broccoli:
Cut broccoli into bite-sized florets.
In a mixing bowl, toss the broccoli with olive oil, lemon pepper, and garlic salt. Adjust the seasoning to your liking.
Arrange on a Baking Sheet:
Line a baking sheet with parchment paper or lightly grease it.
Spread the broccoli on one side of the sheet and place the seasoned pork chops on the other side.
Bake:
Place the baking sheet in the preheated oven.
After 5 minutes, remove the sheet and toss the broccoli for even cooking.
Place the pork chops back on the sheet and continue baking for an additional 10-15 minutes or until the pork reaches an internal temperature of 145°F (63°C).
Let it Rest:
Once done, remove the baking sheet from the oven.
Allow the pork chops to rest for a few minutes. This helps the juices redistribute, keeping the meat tender and flavorful.
Serve:
Plate the pork chops alongside the lemon garlic broccoli.
Season with additional salt and pepper if desired.
