Southwest Style Potato Soup


  • 2 bags (20 oz each) Simply Potatoes Southwest Style Hash Browns
  • 2 cartons (32 oz each) chicken broth
  • 1 packet Pioneer Country Gravy (preferably peppered gravy)


  1. In a large soup pot, combine the Simply Potatoes Southwest Style Hash Browns and chicken broth.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally to ensure even cooking.
  3. Once the soup is simmering, reduce the heat to low and cover the pot with a lid. Let it simmer for approximately 4 hours, allowing the flavors to meld and the potatoes to become tender.
  4. After 4 hours, prepare the Pioneer Country Gravy according to the package instructions. Make sure to use the peppered gravy variant for an extra kick of flavor.
  5. Add the prepared gravy to the simmered potato and broth mixture. Stir well to incorporate the gravy into the soup.
  6. Let the soup continue to simmer on low for an additional 15-20 minutes, allowing the flavors to fully meld.
  7. Taste the soup and adjust the seasoning if necessary. You can add salt, pepper, or other seasonings to suit your preference.
  8. Serve the Southwest Style Potato Soup hot, garnished with your favorite toppings such as shredded cheese, green onions, or a dollop of sour cream.
  9. If you have leftovers, let the soup cool completely before transferring it to freezer-safe containers. Label and date the containers and store them in the freezer for future meals.
  10. When reheating frozen leftovers, thaw the soup in the refrigerator overnight and then heat it on the stove or in the microwave until hot and bubbly.
