Southwest Style Potato Soup
Ingredients:
- 2 bags (20 oz each) Simply Potatoes Southwest Style Hash Browns
- 2 cartons (32 oz each) chicken broth
- 1 packet Pioneer Country Gravy (preferably peppered gravy)
Instructions:
- In a large soup pot, combine the Simply Potatoes Southwest Style Hash Browns and chicken broth.
- Bring the mixture to a simmer over medium heat, stirring occasionally to ensure even cooking.
- Once the soup is simmering, reduce the heat to low and cover the pot with a lid. Let it simmer for approximately 4 hours, allowing the flavors to meld and the potatoes to become tender.
- After 4 hours, prepare the Pioneer Country Gravy according to the package instructions. Make sure to use the peppered gravy variant for an extra kick of flavor.
- Add the prepared gravy to the simmered potato and broth mixture. Stir well to incorporate the gravy into the soup.
- Let the soup continue to simmer on low for an additional 15-20 minutes, allowing the flavors to fully meld.
- Taste the soup and adjust the seasoning if necessary. You can add salt, pepper, or other seasonings to suit your preference.
- Serve the Southwest Style Potato Soup hot, garnished with your favorite toppings such as shredded cheese, green onions, or a dollop of sour cream.
- If you have leftovers, let the soup cool completely before transferring it to freezer-safe containers. Label and date the containers and store them in the freezer for future meals.
- When reheating frozen leftovers, thaw the soup in the refrigerator overnight and then heat it on the stove or in the microwave until hot and bubbly.
