Slow Cooker Bacon Corn Chowder

Ingredients:

  • 2 large carrots, chopped
  • 1 large onion, chopped
  • 4 potatoes, chopped
  • 2 (16 oz) cans of corn, drained OR one small (10-12 oz) bag of frozen corn
  • 2 (16 oz) cans of creamed corn
  • 4 cups of chicken broth
  • 1 lb bacon, cooked and crumbled
  • ½ teaspoon thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • Pinch of nutmeg
  • Salt & pepper, to taste
  • 1 (12 oz) can of evaporated milk
  • 2 tablespoons cornstarch
  • 3 tablespoons butter

Instructions:

  1. In a slow cooker, combine chopped carrots, onion, potatoes, both cans of corn (drained if using canned corn), creamed corn, chicken broth, cooked and crumbled bacon, thyme, parsley, garlic powder, nutmeg, salt, and pepper. Make sure the ingredients are well mixed.
  2. Add enough chicken broth to just cover the ingredients. Stir to combine.
  3. Cover the slow cooker and cook on low heat for 7-8 hours, or until the vegetables are tender and flavors are well combined.
  4. About 30 minutes before serving, combine cornstarch and evaporated milk in a small bowl until smooth.
  5. Stir the cornstarch mixture into the slow cooker along with butter. Continue cooking for the remaining 30 minutes.
  6. Taste and adjust seasoning with salt and pepper if necessary.
