Savory Kielbasa and Potato Bake
Ingredients:
- 1 package of kielbasa (approximately 14 oz), sliced
- 2 cans (14.5 oz each) cut green beans, drained
- 3-4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sliced kielbasa, drained green beans, and diced potatoes.
- Drizzle the olive oil over the mixture and sprinkle with garlic powder, salt, black pepper, and red pepper flakes (if using). Toss well to coat all ingredients evenly.
- Transfer the mixture to a baking dish, spreading it out into an even layer.
- Cover the baking dish with aluminum foil, ensuring it’s tightly sealed around the edges to trap steam.
- Place the covered baking dish in the preheated oven and bake for 40 minutes.
- After 40 minutes, carefully remove the foil from the baking dish and give the mixture a gentle stir.
- Return the uncovered dish to the oven and bake for an additional 10-15 minutes or until the potatoes are tender and lightly browned, and the kielbasa is cooked through.
- Once done, remove from the oven and let it cool for a few minutes.
- Serve the savory kielbasa and potato bake hot, garnished with fresh chopped parsley if desired.
