I saw this recipe in the group last week but did it a little different.
Salisbury meatballs:
Frozen meatballs
Brown gravy pack
French onion soup mix
Made it with mashed potatoes and garlic thyme glazed carrots.

 

Salisbury Meatballs with Mashed Potatoes and Garlic Thyme Glazed Carrots

Ingredients:

For the Salisbury Meatballs:
  • 1 package (about 1 lb) frozen meatballs (beef, turkey, or vegetarian options)
  • 1 packet brown gravy mix
  • 1 packet French onion soup mix
  • Water (according to the gravy mix instructions)
For the Mashed Potatoes:
  • 4 large potatoes, peeled and chopped
  • 1/2 cup butter
  • 1/2 cup milk
  • Salt and pepper to taste
For the Garlic Thyme Glazed Carrots:
  • 1 lb carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions:

1. Prepare Salisbury Meatballs:

a. In a large skillet, cook the frozen meatballs according to the package instructions until they are browned and cooked through.

b. In a separate bowl, mix the brown gravy pack and French onion soup mix with water as per the instructions on the packets.

c. Pour the gravy mixture over the cooked meatballs in the skillet. Simmer for a few minutes until the sauce thickens and coats the meatballs.

2. Make Mashed Potatoes:

a. Boil the peeled and chopped potatoes until they are fork-tender.

b. Drain the potatoes and mash them with butter, milk, salt, and pepper until smooth and creamy.

c. Adjust the consistency by adding more milk if needed.

3. Prepare Garlic Thyme Glazed Carrots:

a. In a separate pan, heat olive oil over medium heat.

b. Add minced garlic and sauté for a minute until fragrant.

c. Add sliced carrots, thyme leaves, salt, and pepper. Cook until the carrots are tender but still have a bit of crunch.

4. Serve:

a. Plate the Salisbury meatballs on a bed of mashed potatoes.

b. Arrange the garlic thyme glazed carrots on the side.

c. Garnish with extra thyme leaves if desired.
