Mexican Lasagna! (It’s super cheap!)
It’s sooo good!!! Definitely added it to my rotation of meals!
I made two 9×13 pans so cut this in half if only making one pan.
•Two boxes of cheesy enchilada hamburger helper
•2lbs ground beef
•Can nacho cheese
•20-30 flour tortillas
•shredded cheese to top with
Ingredients:
- 1 box (7.5 oz) Cheesy Enchilada Hamburger Helper
- 1 lb ground beef
- 1 can (15 oz) nacho cheese sauce
- 10-15 flour tortillas
- 1-2 cups shredded cheese (cheddar, Mexican blend, or your choice)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare Hamburger Helper: Prepare the Cheesy Enchilada Hamburger Helper according to the package instructions. Typically, this involves browning the ground beef in a skillet, adding water, pasta, and seasoning mix, and simmering until the pasta is tender. Set aside.
- Layer the Lasagna:
- In a 9×13-inch baking pan, spread a thin layer of nacho cheese sauce on the bottom.
- Place a layer of flour tortillas over the cheese sauce. You may need to cut or overlap them to cover the bottom of the pan.
- Add half of the prepared Hamburger Helper on top of the tortilla layer.
- Add another layer of flour tortillas.
- Spread another layer of nacho cheese sauce over the tortillas.
- Add the remaining Hamburger Helper on top.
- Top with Cheese:
- Place another layer of flour tortillas over the Hamburger Helper.
- Pour the rest of the nacho cheese sauce over the tortillas.
- Sprinkle the shredded cheese generously over the top. This will create a delicious cheesy crust when baked.
- Bake the Lasagna: Cover the pan with aluminum foil and bake in the preheated oven for 25-30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the lasagna is heated through.
- Serve and Enjoy: Carefully remove the lasagna from the oven and let it cool for a few minutes before slicing. Serve your budget-friendly Mexican lasagna with your favorite sides like a green salad, guacamole, or sour cream.
