Homemade Sausage Biscuits

Ingredients:

  • 1 lb Jimmy Dean sausage
  • 1 can (8 biscuits) refrigerated biscuit dough
  • 4 eggs
  • Salt and pepper to taste
  • Optional: cheese slices or shredded cheese

Instructions:

  1. Prepare the Sausage:
    • Preheat a skillet over medium heat.
    • Remove the sausage from its casing and crumble it into the skillet.
    • Cook the sausage until it’s browned and cooked through, breaking it into smaller pieces as it cooks. Drain excess grease if necessary. Set aside to cool slightly.
  2. Prepare the Eggs:
    • In a bowl, crack the eggs and beat them lightly with a fork or whisk. Season with salt and pepper according to your taste.
    • Heat a non-stick skillet over medium-low heat. Pour the beaten eggs into the skillet and cook, stirring occasionally, until they are scrambled and fully cooked. Remove from heat and set aside.
  3. Prepare the Biscuits:
    • Preheat your oven according to the instructions on the biscuit dough can.
    • Open the can of biscuit dough and separate the individual biscuits. Place them on a baking sheet lined with parchment paper, leaving some space between each biscuit.
    • Bake the biscuits according to the instructions on the can, until they are golden brown and cooked through. Remove from the oven and allow them to cool slightly.
  4. Assemble the Sausage Biscuits:
    • Once the sausage, eggs, and biscuits are all cooked and slightly cooled, it’s time to assemble the sausage biscuits.
    • Slice each biscuit in half horizontally to create a top and bottom.
    • Place a spoonful of scrambled eggs on the bottom half of each biscuit.
    • Top the eggs with a portion of the cooked sausage.
    • If desired, add a slice or sprinkle of cheese on top of the sausage.
    • Place the top half of the biscuit over the filling to form a sandwich.
  5. Storage:
    • Once assembled, let the sausage biscuits cool completely.
    • Individually wrap each biscuit sandwich in plastic wrap or aluminum foil.
    • Place the wrapped biscuits in a large resealable freezer bag or airtight container.
    • Label the container with the date and store it in the freezer.
  6. Reheating:
    • To reheat, remove a wrapped biscuit from the freezer and unwrap it.
    • Place the unwrapped biscuit on a microwave-safe plate and microwave on high for 1-2 minutes, or until heated through.
    • Alternatively, you can reheat the biscuits in a preheated oven at 350°F (175°C) for 10-15 minutes, or until warmed through.
