Egg Pasta Salad

Budget-Friendly Deviled Egg Pasta Salad

Ingredients:

  • 1 box of Ditalini pasta
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon dry mustard or regular mustard
  • 1/2 cup finely diced red onion
  • 4 hard-boiled eggs, chopped
  • Paprika, for garnish

Instructions:

  1. Cook the Ditalini pasta according to the package instructions. Add a pinch of salt to the boiling water for flavor. Drain and let it cool to room temperature.
  2. In a large mixing bowl, combine the cooled Ditalini pasta, salt, and pepper to taste. Toss the pasta to ensure even seasoning.
  3. Add the dry mustard or regular mustard to the pasta. Adjust the amount to your liking, depending on your preference for tanginess and spice.
  4. Gently fold in the finely diced red onion, distributing it evenly throughout the pasta salad.
  5. Carefully fold in the chopped hard-boiled eggs, being mindful not to mash them too much. The egg yolks will contribute to the creamy texture of the salad.
  6. Taste the pasta salad and adjust the seasoning if needed by adding more salt, pepper, or mustard.
  7. Once the flavors are well-balanced, transfer the pasta salad to a serving dish.
  8. Sprinkle paprika over the top of the pasta salad for a classic deviled egg flavor and a pop of color.
  9. Cover the pasta salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  10. Serve chilled and enjoy your budget-friendly deviled egg pasta salad as a refreshing side dish for any occasion.

Note: Feel free to customize the recipe by adding other ingredients like diced celery, pickles, or fresh herbs for added freshness and crunch
