Cheesy Rotel Pasta Delight
Ingredients:
- 1 pound ground chuck
- 1 cup diced onions
- 1 cup diced bell peppers (any color of your choice)
- 2 cups pasta noodles (penne or rotini work well)
- 1 can (10 ounces) Rotel tomatoes, undrained
- 8 ounces Velveeta cheese, cubed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 ounces Blanco Velveeta cheese, cubed
- 1 teaspoon season salt
- 1 teaspoon lemon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon taco seasoning
- 1 teaspoon Slap Ya Mama (cajun seasoning)
- 1 teaspoon Accent (optional)
- 1 cup heavy whipping cream
Instructions:
- Cook Pasta Noodles:
- Cook the pasta noodles according to the package instructions. Drain and set aside.
- Brown Ground Chuck:
- In a large skillet over medium heat, brown the ground chuck until fully cooked. Drain excess fat if needed.
- Saute Vegetables:
- Add diced onions and bell peppers to the skillet with the cooked ground chuck. Saute until vegetables are tender.
- Add Rotel Tomatoes:
- Pour the can of Rotel tomatoes with its juice into the skillet. Stir to combine with the meat and vegetables.
- Incorporate Cheeses:
- Add the cubed Velveeta cheese, shredded cheese, and Blanco Velveeta cheese to the skillet. Stir continuously until the cheeses are melted and create a creamy sauce.
- Seasonings:
- Sprinkle in the season salt, lemon pepper, garlic powder, onion powder, taco seasoning, Slap Ya Mama, and Accent. Adjust the seasonings to taste, keeping in mind that some seasonings may already contain salt.
- Add Heavy Whipping Cream:
- Pour in the heavy whipping cream and stir well to combine. Allow the mixture to simmer for a few minutes until it thickens slightly.
- Combine with Pasta:
- Gently fold in the cooked pasta noodles, ensuring they are well coated with the cheesy Rotel mixture.
- Serve:
- Serve hot, garnished with additional shredded cheese and chopped fresh herbs if desired.
