Cheesy potato and ground beef casserole.

Cheesy potato and ground beef casserole. I forgot a photo of it when it came out of the oven so this is a leftovers picture. Very simple and pretty cheap to make. Ingredients and recipe are below.


Ingredients:
1 pound ground beef
1 can cream of mushroom
1 can cheddar cheese soup
32 oz bag of cubed frozen potatoes. I used potatoes, Obrien 🙂
Shredded cheese. I used Colby jack and some sharp cheddar
1 small yellow onion diced small
Salt and pepper to taste, garlic powder, and a little thyme


Directions:
Preheat oven to 350 degrees
Cook the meat with the onion and garlic powder and whatever other seasonings you want ..then drain fat if needed
In a large mixing bowl add in the meat mixture, potatoes, both cans of soup ( no water just the soup) Shredded cheese, and a pinch of thyme or so and salt and pepper to taste and mix it all together really well( I found defrosting the frozen potatoes just a bit made this way easier)
Pour the mixture into a greased 9×13 casserole dish and top with some more Shredded cheese ( Note, I don’t measure cheese lol we are cheese loves so I just go with how much we like and want in the casserole and top)
Cover with tin foil
Bake for 30 mins and then remove the foil and bake another 30 mins. 😀 I served with green beans and Cresent rolls. I know I need to remember to take better photos haha 😄 but it got the thumbs up and was easy to throw together and pretty cheap.
