Cabbage Patch Soup with a Twist
Ingredients:
- 1 pound ground beef, cooked
- 2 cans (10 ounces each) Rotel tomatoes
- 1 onion, chopped
- 4 cups beef broth
- 1 small can (8 ounces) chopped tomatoes
- 1 tablespoon Italian seasoning
- 1 can (15 ounces) cannellini beans, drained and rinsed
- Salt and pepper, to taste
- 3-4 cups chopped cabbage
- Cooked pasta (optional)
Instructions:
- In a large slow cooker, combine the cooked ground beef, Rotel tomatoes, chopped onion, beef broth, chopped tomatoes, Italian seasoning, and cannellini beans. Season with salt and pepper to taste.
- Stir the ingredients together until well combined.
- Set the slow cooker to low heat and cook for about 5 hours.
- After 5 hours, add the chopped cabbage to the slow cooker.
- Continue cooking on low heat for an additional 1-2 hours, depending on your preference for the crispness of the cabbage. If you prefer softer cabbage, cook for the full 2 hours.
- If desired, add cooked pasta to the soup during the last 30 minutes of cooking, stirring to combine.
- Once the cabbage is cooked to your liking, adjust the seasoning if necessary.
