Budget Chicken and Dumplings

 

Tonight I made homemade chicken n dumplings for my boyfriend and I for only $13.95 and I have so much leftovers!! I’m sure it could go cheaper too!!
The recipe:
Already cooked chicken (I chose a rotisserie chicken)
Bring chicken broth to a gentle boil
Add can of cream of chicken and mix well
Stir in chicken
Cut biscuits and mix in
Put a small layer of pepper and stir again
Then simmer for 5-10 minutes

Budget Chicken and Dumplings

Ingredients:

  • 1 whole rotisserie chicken (already cooked), shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 6 cups chicken broth
  • 1 can (16.3 oz) refrigerated biscuit dough
  • 1 teaspoon black pepper (adjust to taste)
  • Salt to taste (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Chicken:
    • If you haven’t done so already, shred the rotisserie chicken into bite-sized pieces. Set aside.
  2. Prepare the Broth:
    • In a large pot, bring the chicken broth to a gentle boil over medium heat.
  3. Add Cream of Chicken Soup:
    • Stir in the can of cream of chicken soup, ensuring it is well mixed with the broth.
  4. Incorporate Shredded Chicken:
    • Add the shredded chicken to the pot, stirring well to combine. Allow the mixture to return to a simmer.
  5. Cut Biscuits and Mix:
    • While the broth is simmering, separate the biscuit dough into individual biscuits. Cut each biscuit into quarters.
    • Gently drop the biscuit pieces into the simmering broth and chicken mixture, stirring to distribute evenly.
  6. Season with Pepper (and Salt):
    • Sprinkle black pepper over the mixture. Add salt if needed, keeping in mind that the rotisserie chicken and canned soup may already have salt.
    • Stir gently to incorporate the pepper and salt into the dish.
  7. Simmer:
    • Reduce the heat to low, cover the pot, and let the chicken and dumplings simmer for 5-10 minutes. This allows the biscuit dough to cook and absorb the flavors.
  8. Check for Doneness:
    • Check the dumplings for doneness by ensuring they are cooked through. They should be fluffy and not doughy in the center.
  9. Serve:
    • Ladle the chicken and dumplings into bowls. Optionally, garnish with chopped fresh parsley for added freshness and color.
