This came out delicious! Two thawed chicken breasts in the crock pot with 1.5 cups of regular bbq saucesauce, 1 Tblsp. brown sugar, 1 Tblsp. Worcestershire sauce, 1/2 tsp. garlic powder, 1/2 tsp. onion powder, and 1 tsp. chili powder. Mix all the ingredients well and make sure the chicken is covered. Cover and cook on high for 3-4 hours or on low for 6-7 hours. Shred when all cooked. We put this over baked potatoes and munched on out.

BBQ Chicken Loaded Baked Potatoes

Ingredients:

  • 2 thawed chicken breasts
  • 1.5 cups regular BBQ sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large baking potatoes
  • Toppings: Shredded cheese, sour cream, green onions, and chopped cilantro (optional)

Instructions:

  1. Prepare the Crock Pot:
    • Place the thawed chicken breasts in the slow cooker.
  2. Create the BBQ Sauce Mixture:
    • In a bowl, combine the regular BBQ sauce, brown sugar, Worcestershire sauce, garlic powder, onion powder, and chili powder. Mix well until all ingredients are incorporated.
    • Season the mixture with salt and pepper to taste.
  3. Coat the Chicken:
    • Pour the BBQ sauce mixture over the chicken breasts, ensuring they are well coated on all sides.
  4. Cooking Time:
    • Cover the slow cooker with its lid.
    • Cook on high for 3-4 hours or on low for 6-7 hours until the chicken is tender and easily shredded with a fork.
  5. Shred the Chicken:
    • Once the chicken is cooked, use two forks to shred it directly in the slow cooker. Mix the shredded chicken with the remaining sauce for extra flavor.
  6. Prepare the Baked Potatoes:
    • While the chicken is cooking, bake the potatoes in the oven until tender. You can do this by scrubbing the potatoes, rubbing them with olive oil, and baking at 400°F (200°C) for about 45-60 minutes or until the skin is crispy.
  7. Assemble the Loaded Baked Potatoes:
    • Slice open each baked potato and fluff the insides with a fork.
    • Spoon the shredded BBQ chicken generously over each potato.
  8. Add Toppings:
    • Sprinkle shredded cheese over the hot chicken to allow it to melt.
    • Add a dollop of sour cream on top.
    • Garnish with green onions and chopped cilantro for freshness and color.
  9. Serve and Enjoy:
