Apple Cinnamon Streusel Muffins

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3/4 cup unsweetened applesauce
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

For the Topping:

  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions:

  1. Preparation: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.
  2. Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the applesauce until well combined.
  3. Incorporate Dry Ingredients: In a separate bowl, sift together the flour, baking powder, ground cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. The batter will be thick, but avoid overmixing.
  4. Fill Muffin Tins: Spoon the batter into the prepared muffin tins, filling each about 2/3 full.
  5. Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Prepare Topping: While the muffins are baking, melt the butter in a small bowl. In another small bowl, combine the granulated sugar and cinnamon for the topping.
  7. Coat Muffins: Once the muffins are baked, remove them from the oven and allow them to cool slightly. While they are still warm, dip the top of each muffin into the melted butter, then immediately dip into the cinnamon-sugar mixture, ensuring an even coating.
  8. Serve: Place the coated muffins on a wire rack to cool completely or enjoy them warm. These muffins are best served fresh but can be stored in an airtight container at room temperature for up to 3 days.
