The trick to saving money on meat is to use it in meals that you can stretch it. This morning I made a big batch of breakfast burrito filling. There’s only one pound of sausage in here and I added 8 small potatoes diced, two onions diced and eight eggs scrambled up. I’m going to roll all of this into burritos and it will feed my family of four breakfast for a week!

Hearty Breakfast Burrito Bowl

Ingredients:

  • 1 lb sausage (you can use turkey or vegetarian sausage for a healthier option)
  • 8 small potatoes, diced
  • 2 onions, diced
  • 8 eggs, scrambled
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, salsa, avocado, sour cream

Instructions:

  1. Cook Sausage:
    • In a large skillet over medium heat, cook the sausage until browned and cooked through. Break it into crumbles as it cooks. Once done, set it aside in a bowl.
  2. Sauté Potatoes and Onions:
    • In the same skillet, add olive oil. Add diced potatoes and onions. Season with salt and pepper. Cook until the potatoes are golden and onions are translucent. This should take about 10-12 minutes.
  3. Scramble Eggs:
    • Push the potatoes and onions to one side of the skillet. Pour the scrambled eggs into the other side. Cook the eggs, stirring occasionally, until they are just set. Mix the eggs with the potatoes and onions.
  4. Combine Ingredients:
    • Add the cooked sausage back into the skillet. Mix everything together, ensuring even distribution of ingredients.
  5. Serve:
    • Spoon the hearty breakfast burrito filling into bowls. Top with optional toppings like shredded cheese, salsa, avocado, or sour cream.
  6. Assemble Burritos (optional):
    • If desired, spoon the filling into tortillas and roll them into burritos. Wrap them in foil for easy reheating.
  7. Storage:
    • Store any leftovers in airtight containers in the refrigerator. The filling can be reheated for quick and easy breakfasts throughout the week.
