Ingredients:
- 1 lb chicken thighs, boneless and skinless
- 1 block (8 oz) cream cheese, softened
- 1 packet ranch seasoning
- 1 bag (about 2 lbs) tater tots
Instructions:
- Place the chicken thighs in the slow cooker.
- Sprinkle the ranch seasoning evenly over the chicken.
- Cut the cream cheese into chunks and place them on top of the chicken.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shreds with a fork.
- About 30 minutes before serving, preheat your oven to 425°F (220°C).
- While the oven is heating, spread the tater tots in a single layer on a baking sheet.
- Once the chicken is fully cooked, shred it using two forks and mix it well with the creamy ranch sauce in the slow cooker.
- In a baking dish, spread the shredded chicken and ranch mixture evenly.
- Carefully place the tater tots on top of the chicken mixture, forming an even layer.
- Bake in the preheated oven for 20-25 minutes or until the tater tots are golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before serving.
- Garnish with chopped fresh parsley or green onions if desired.
Note: Feel free to add shredded cheddar cheese on top during the last 5 minutes of baking for an extra cheesy twist.
