Texas Chopped Southwest Salad with Grilled Chicken

Ingredients:

  • 1 head Romaine lettuce, chopped
  • 1 can black beans, drained and rinsed
  • 1 can fresh corn kernels, drained (or use grilled corn kernels)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup chopped cilantro
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 avocados, diced
  • 1 lime, cut into wedges
  • 2 cups grilled chicken breast, sliced
  • 1 cup tortilla chips, crushed

Dressing:

  • 1 cup ranch dressing
  • 1 package taco seasoning

Instructions:

1. Prepare the Dressing:

  • In a small bowl, mix together the ranch dressing and taco seasoning until well combined. Set aside.

2. Prepare the Salad:

  • In a large salad bowl, combine the chopped Romaine lettuce, black beans, corn kernels, cherry tomatoes, diced cucumber, and chopped cilantro.
  • Add the shredded cheese and diced avocado to the bowl.

3. Grill the Chicken:

  • Season the chicken breast with salt, pepper, and any desired spices.
  • Grill the chicken over medium-high heat until cooked through, about 6-8 minutes per side. Slice the grilled chicken into strips.

4. Assemble the Salad:

  • Add the sliced grilled chicken to the salad bowl.
  • Pour the ranch taco dressing over the salad ingredients.
  • Gently toss the salad until everything is evenly coated with the dressing.

5. Serve:

  • Divide the salad among serving plates or bowls.
  • Squeeze fresh lime juice over each serving.
  • Sprinkle crushed tortilla chips on top of each salad.
