Texas Chopped Southwest Salad with Grilled Chicken
Ingredients:
- 1 head Romaine lettuce, chopped
- 1 can black beans, drained and rinsed
- 1 can fresh corn kernels, drained (or use grilled corn kernels)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ cup chopped cilantro
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 avocados, diced
- 1 lime, cut into wedges
- 2 cups grilled chicken breast, sliced
- 1 cup tortilla chips, crushed
Dressing:
- 1 cup ranch dressing
- 1 package taco seasoning
Instructions:
1. Prepare the Dressing:
- In a small bowl, mix together the ranch dressing and taco seasoning until well combined. Set aside.
2. Prepare the Salad:
- In a large salad bowl, combine the chopped Romaine lettuce, black beans, corn kernels, cherry tomatoes, diced cucumber, and chopped cilantro.
- Add the shredded cheese and diced avocado to the bowl.
3. Grill the Chicken:
- Season the chicken breast with salt, pepper, and any desired spices.
- Grill the chicken over medium-high heat until cooked through, about 6-8 minutes per side. Slice the grilled chicken into strips.
4. Assemble the Salad:
- Add the sliced grilled chicken to the salad bowl.
- Pour the ranch taco dressing over the salad ingredients.
- Gently toss the salad until everything is evenly coated with the dressing.
5. Serve:
- Divide the salad among serving plates or bowls.
- Squeeze fresh lime juice over each serving.
- Sprinkle crushed tortilla chips on top of each salad.
