Ingredients:

  • 1 boneless pork chop, thinly sliced from a tenderloin
  • Salt and pepper, to taste
  • 1 egg
  • All-purpose flour
  • Bacon fat (reserved from cooking)

  • 1 tablespoon brown sugar or honey
  • 1 can green beans, drained and rinsed
  • 1 can carrots, drained and rinsed
  • 1 baked potato
  • 1 cup milk

Instructions:

  1. Prepare the Pork Chop:
    • Season the thinly sliced pork chop with salt and pepper.
    • Dip the pork chop slices in beaten egg, then coat them in flour.
    • Heat some bacon fat in a frying pan over medium-high heat.
    • Fry the pork chops until golden brown and cooked through, about 3-4 minutes per side. Set aside and keep warm.

    • Add the drained and rinsed carrots to the pot.
    • Stir in 1 tablespoon of brown sugar or honey.
    • Cook, stirring occasionally, until the carrots are glazed and heated through. Keep warm.
  4. Prepare the Green Beans:
    • In another small pot, heat a dab of bacon fat over medium heat.
    • Add the drained and rinsed green beans to the pot.
    • Cook, stirring occasionally, until heated through. Keep warm.
  5. Prepare the Baked Potato:
    • Wash the potato thoroughly and prick it with a fork in several places.
    • Place the potato in the microwave and cook on high for 4-8 minutes, depending on its size, until tender.
  6. Serve:
    • Place a serving of glazed carrots, green beans, and a baked potato on each plate.
    • Top the pork chops with the gravy and serve alongside the vegetables and potato.
