Potato-Wrapped Meatloaf

 

i don’t make meatloaf very often but someone gave me an idea to surround the meatloaf with potatoes to soak up the grease…
over is set to 375, how long should i bake it for??
edit to add the finished product and it turned out perfectly! baked for an hour and a half!

 

Potato-Wrapped Meatloaf Recipe

Ingredients:

  • 1.5 lbs ground beef (or a mix of ground beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4-5 large potatoes, thinly sliced

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground meat, breadcrumbs, milk, ketchup, Worcestershire sauce, chopped onion, minced garlic, oregano, thyme, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Shape the meat mixture into a loaf shape and place it in the center of a baking dish.
  4. Arrange the thinly sliced potatoes around the meatloaf, creating a layer that surrounds and covers the meatloaf. This will help absorb excess grease during baking.
  5. Place the baking dish in the preheated oven and bake at 375°F for approximately 1.5 hours or until the internal temperature of the meatloaf reaches 160°F (71°C). Cooking times may vary, so it’s always a good idea to use a meat thermometer to ensure the meat is thoroughly cooked.
  6. Once cooked, remove the dish from the oven and let it rest for a few minutes before slicing.
  7. Serve the meatloaf slices with the delicious potato wrapping, and enjoy a flavorful and comforting meal!
