Potato-Wrapped Meatloaf Recipe
Ingredients:
- 1.5 lbs ground beef (or a mix of ground beef and pork)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup ketchup
- 1/4 cup Worcestershire sauce
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4-5 large potatoes, thinly sliced
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground meat, breadcrumbs, milk, ketchup, Worcestershire sauce, chopped onion, minced garlic, oregano, thyme, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Shape the meat mixture into a loaf shape and place it in the center of a baking dish.
- Arrange the thinly sliced potatoes around the meatloaf, creating a layer that surrounds and covers the meatloaf. This will help absorb excess grease during baking.
- Place the baking dish in the preheated oven and bake at 375°F for approximately 1.5 hours or until the internal temperature of the meatloaf reaches 160°F (71°C). Cooking times may vary, so it’s always a good idea to use a meat thermometer to ensure the meat is thoroughly cooked.
- Once cooked, remove the dish from the oven and let it rest for a few minutes before slicing.
- Serve the meatloaf slices with the delicious potato wrapping, and enjoy a flavorful and comforting meal!
