Peanut Butter Fudge Cake
Ingredients:
- 2 cups sugar
- 1 cup milk
- 2 cups creamy peanut butter
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup boiling water
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Prepare the Peanut Butter Fudge Mixture: In a large saucepan, combine the sugar and milk. Bring to a rapid boil over medium heat, stirring constantly. Boil for 2 and a half minutes. Remove from heat and stir in the vanilla extract and creamy peanut butter until smooth. Set aside to cool slightly.
- Make the Cake Batter: In a separate large mixing bowl, whisk together the flour, baking powder, and salt. Add the eggs and vegetable oil, then gradually stir in the boiling water until well combined.
- Combine the Mixtures: Pour the peanut butter fudge mixture into the bowl with the cake batter. Gently fold the two mixtures together until just combined. Be careful not to overmix.
- Bake the Cake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan on a wire rack for at least 15-20 minutes before slicing and serving. Optionally, you can drizzle some melted chocolate or sprinkle chopped peanuts on top for extra indulgence.
