Mexican Enchilada Casserole Delight

Ingredients:

  • 1 pack of frozen burritos (bean and cheese)
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 small pack saffron rice, cooked
  • 2 cans red enchilada sauce
  • Shredded Mexican blend cheese
  • Optional: 1 can of Rotel (diced tomatoes and green chilies)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a casserole dish, line the bottom with the frozen burritos.
  3. In a skillet over medium heat, brown the ground beef. Once browned, add the taco seasoning and mix well.
  4. Spread the seasoned ground beef over the layer of frozen burritos in the casserole dish.
  5. Cook the saffron rice according to the package instructions and layer it on top of the ground beef.
  6. If you have Rotel, spread it over the rice layer for an extra kick of flavor.
  7. Pour the red enchilada sauce evenly over the entire dish, ensuring that all layers are covered.
  8. Sprinkle a generous amount of shredded Mexican blend cheese on top.
  9. Bake in the preheated oven for about 20 to 25 minutes, or until the cheese is golden brown and bubbly.
  10. Remove from the oven and let it cool for a few minutes before serving.
