Mexican Enchilada Casserole Delight
Ingredients:
- 1 pack of frozen burritos (bean and cheese)
 
- 1 pound ground beef
 
- 1 packet taco seasoning
 
- 1 small pack saffron rice, cooked
 
- 2 cans red enchilada sauce
 
- Shredded Mexican blend cheese
 
- Optional: 1 can of Rotel (diced tomatoes and green chilies)
 
Instructions:
- Preheat your oven to 350°F (175°C).
 
- In a casserole dish, line the bottom with the frozen burritos.
 
- In a skillet over medium heat, brown the ground beef. Once browned, add the taco seasoning and mix well.
 
- Spread the seasoned ground beef over the layer of frozen burritos in the casserole dish.
 
- Cook the saffron rice according to the package instructions and layer it on top of the ground beef.
 
- If you have Rotel, spread it over the rice layer for an extra kick of flavor.
 
- Pour the red enchilada sauce evenly over the entire dish, ensuring that all layers are covered.
 
- Sprinkle a generous amount of shredded Mexican blend cheese on top.
 
- Bake in the preheated oven for about 20 to 25 minutes, or until the cheese is golden brown and bubbly.
 
- Remove from the oven and let it cool for a few minutes before serving.
