Grandma’s Classic Macaroni Salad

  • 1 pound elbow noodles
  • Salt and pepper to taste
  • Celery seed to taste
  • 3 hard-boiled eggs, chopped
  • Mayo (Hellman’s or your preferred brand) to taste
  • 1 medium-sized red or yellow onion, finely diced

  1. Cook the Elbow Noodles:
    • Bring a large pot of salted water to a boil.
    • Add the elbow noodles and cook according to the package instructions until al dente.
    • Drain and rinse the noodles under cold water to stop the cooking process. Allow them to cool completely.
  2. Prepare the Ingredients:
    • While the noodles are cooking, chop the hard-boiled eggs and finely dice the onion.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the cooled elbow noodles, chopped hard-boiled eggs, and diced onion.
  4. Season the Salad:
    • Season the salad with salt, pepper, and celery seed to taste. Start with a small amount and adjust according to your preference.
  5. Add Mayo:
    • Add mayonnaise to the salad and mix well to coat all the ingredients evenly. Start with a few tablespoons and add more until you reach your desired level of creaminess.
  6. Chill Before Serving:
    • Cover the bowl with plastic wrap and refrigerate the macaroni salad for at least 1-2 hours before serving. Chilling allows the flavors to meld and enhances the overall taste.
  7. Serve and Enjoy:
    • Once chilled, give the salad a final stir and adjust the seasoning if necessary.
    • Serve the macaroni salad as a side dish at picnics, barbecues, or family gatherings. It pairs well with grilled meats or as a standalone dish.
  8. Optional Additions:
    • Feel free to customize the recipe by adding diced bell peppers, shredded carrots, or fresh herbs like parsley for additional flavor and color.

This classic macaroni salad is a timeless favorite, perfect for bringing back those cherished memories of your grandmother’s kitchen. Enjoy!
