👉Groundbeef enchiladas

Ground beef enchiladas
8-8 inch flour tortillas
1 lb ground beef
1/2 bell pepper, diced
1/2 medium yellow onion, diced
1 can diced green chiles
1 packet taco seasoning
1/2 cup water
1 cup shredded cheese
2-10 oz cans enchilada sauce
Cook ground beef in a frying pan. Drain off the grease and add in pepper and onion, cook for 3-5 min until translucent. Mix taco seasoning with water and pour over meat. Stir to combine and simmer until water has mostly evaporated. Add in the green chiles and stir to combine.
Preheat the oven to 350. Grease a 9×13 casserole dish and pour 3/4 of one can of enchilada sauce into the bottom of the dish. Place about 1/2 cup of beef mixture into each tortilla and roll to enchilada shape. Lay seam-side down in the casserole dish. Pour the remaining 1 1/4 cans enchilada sauce on top of the enchiladas and add the shredded cheese. Bake for 20-25 min at 350 until warmed through and bubbly. Serve with sour cream and cilantro on top.
