Honey Garlic Glazed Chicken with Smashed Garlic Butter Potatoes

Ingredients:

For the Chicken:

  • 3 boneless chicken breasts, sliced in half
  • Salt and pepper, to taste
  • All-purpose flour, for coating
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon fresh parsley, chopped

For the Smashed Garlic Butter Potatoes:

  • 6 medium-sized potatoes, peeled and quartered
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Season the chicken breasts with salt and pepper. Lightly coat them with flour, ensuring an even coating.
  2. In a large skillet, heat 2 tablespoons of butter over medium-high heat. Sear the chicken breasts on both sides until golden brown and cooked through, about 4-5 minutes per side.
  3. While the chicken is cooking, prepare the glaze. In a bowl, combine minced garlic, honey, soy sauce, and chopped parsley. Adjust the quantities to your taste preferences.
  4. Once the chicken is cooked, pour the honey garlic glaze over the chicken in the skillet. Reduce the heat to medium-low and let it simmer for 15 minutes, allowing the glaze to thicken and coat the chicken.
  5. While the chicken is simmering, prepare the smashed garlic butter potatoes. Boil the quartered potatoes in a pot of salted water until fork-tender, about 15-20 minutes. Drain the potatoes.
  6. In a separate pan, melt 4 tablespoons of butter over medium heat. Add minced garlic and sauté for a minute until fragrant. Add the boiled potatoes to the pan and smash them with a fork or potato masher. Season with salt and pepper to taste.
  7. Continue to cook the smashed potatoes in the garlic butter for an additional 5 minutes, allowing them to crisp up slightly.
  8. Serve the Honey Garlic Glazed Chicken over a bed of smashed garlic butter potatoes. Garnish with fresh parsley.
