Honey Garlic Glazed Chicken with Smashed Garlic Butter Potatoes
Ingredients:
For the Chicken:
- 3 boneless chicken breasts, sliced in half
- Salt and pepper, to taste
- All-purpose flour, for coating
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup honey
- 1/4 cup soy sauce
- 1 tablespoon fresh parsley, chopped
For the Smashed Garlic Butter Potatoes:
- 6 medium-sized potatoes, peeled and quartered
- 4 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
- Season the chicken breasts with salt and pepper. Lightly coat them with flour, ensuring an even coating.
- In a large skillet, heat 2 tablespoons of butter over medium-high heat. Sear the chicken breasts on both sides until golden brown and cooked through, about 4-5 minutes per side.
- While the chicken is cooking, prepare the glaze. In a bowl, combine minced garlic, honey, soy sauce, and chopped parsley. Adjust the quantities to your taste preferences.
- Once the chicken is cooked, pour the honey garlic glaze over the chicken in the skillet. Reduce the heat to medium-low and let it simmer for 15 minutes, allowing the glaze to thicken and coat the chicken.
- While the chicken is simmering, prepare the smashed garlic butter potatoes. Boil the quartered potatoes in a pot of salted water until fork-tender, about 15-20 minutes. Drain the potatoes.
- In a separate pan, melt 4 tablespoons of butter over medium heat. Add minced garlic and sauté for a minute until fragrant. Add the boiled potatoes to the pan and smash them with a fork or potato masher. Season with salt and pepper to taste.
- Continue to cook the smashed potatoes in the garlic butter for an additional 5 minutes, allowing them to crisp up slightly.
- Serve the Honey Garlic Glazed Chicken over a bed of smashed garlic butter potatoes. Garnish with fresh parsley.
