Homemade Frozen Breakfast Sandwiches

Ingredients:

  • 12 large eggs
  • 12 pork sausage patties
  • 12 slices of cheese (cheddar, Swiss, or your preferred type)
  • 12 English muffins
  • Olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). If you have a convection oven, preheat it to 375°F (190°C).
  2. Prepare the Molds: Lightly coat a muffin tin with olive oil to prevent sticking. Crack one egg into each muffin mold. If you prefer, you can use silicone muffin molds for easy removal.
  3. Bake the Eggs: Place the muffin tin in the preheated oven and bake the eggs for about 17 minutes. If you prefer a runny yolk, reduce the baking time accordingly. Keep an eye on them to achieve your desired level of doneness.
  4. Cook the Sausage Patties: While the eggs are baking, cook the pork sausage patties according to the package instructions. You can use a skillet or bake them in the oven.
  5. Assemble the Sandwiches: Once the eggs are done, remove them from the oven and allow them to cool slightly. Meanwhile, split the English muffins and lightly toast them.
  6. Layer the Ingredients: On the bottom half of each English muffin, place a cooked sausage patty followed by a slice of cheese. Then, carefully place a baked egg on top of the cheese.
  7. Complete the Sandwiches: Top each sandwich with the other half of the English muffin.
  8. Wrap and Freeze: Allow the sandwiches to cool completely before wrapping them individually in plastic wrap or aluminum foil. Place the wrapped sandwiches in a freezer-safe bag or container.
  9. Reheat and Enjoy: When ready to enjoy, simply unwrap the desired number of sandwiches and microwave them for 1-2 minutes until heated through. Alternatively, you can thaw them overnight in the refrigerator and heat them in a toaster oven for a crispy texture.
