French Onion Chicken and Noodle Casserole with Caramelized Onions
Ingredients:
- 12 ounces egg noodles (whole wheat for extra fiber), cooked according to package directions
- 4 cups shredded chicken
- 2 cans cream of chicken soup
- 16 ounce container sour cream-based French onion dip (e.g., Dean’s)
- 1 cup shredded cheese (e.g., cheddar)
- French fried onions
- 2 onions, thinly sliced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes. Season with salt and pepper to taste. Set aside.
- In a large mixing bowl, combine the cooked egg noodles, shredded chicken, cream of chicken soup, French onion dip, and shredded cheese. Mix well until everything is evenly combined.
