Mini Meatloafs
2.25lbs ground beef 80/20
1 package Lipton onion soup mix
2 eggs
1/2-3/4 cup Italian season breadcrumbs
3-4 tablespoons ketchup
2-3 tablespoons mustard
Salt and pepper to liking
Spoon into 8 mini loaf pan (pack down with your fingers) filling to the tops.
Bake on 350 degrees for 45-50 min until desired. I broil for a few minutes too.

Savory Mini Meatloafs with Onion Kick

Ingredients:

  • 2.25 lbs ground beef (80/20)
  • 1 package Lipton onion soup mix
  • 2 eggs
  • 1/2 – 3/4 cup Italian seasoned breadcrumbs
  • 3-4 tablespoons ketchup
  • 2-3 tablespoons mustard
  • Salt and pepper to taste

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Grease the 8-mini loaf pan with cooking spray or a light coating of oil.
  2. Mix the Base:
    • In a large mixing bowl, combine the ground beef, Lipton onion soup mix, eggs, Italian seasoned breadcrumbs, ketchup, mustard, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Pack the Loaf Pans:
    • Spoon the meat mixture into each section of the mini loaf pan, packing it down with your fingers to ensure a firm and compact loaf. Fill each compartment to the tops.
  4. Bake to Perfection:
    • Place the filled mini loaf pan in the preheated oven. Bake for 45-50 minutes or until the mini meatloafs are cooked to your desired level of doneness. The internal temperature should reach at least 160°F (71°C).
  5. Broil for a Finishing Touch:
    • For a delicious caramelized finish, switch the oven to broil for the last few minutes of cooking. Keep a close eye to prevent burning, allowing the tops to brown slightly.
  6. Check for Doneness:
    • Ensure the meatloafs are thoroughly cooked by checking the internal temperature with a meat thermometer. The center should register 160°F (71°C) for safe consumption.
  7. Rest Before Serving:
    • Allow the mini meatloafs to rest in the pan for a few minutes before carefully transferring them to a serving platter. This helps retain the juices within the meat.
  8. Serve and Enjoy:
    • Serve the mini meatloafs hot, garnished with additional ketchup or mustard if desired. They pair well with mashed potatoes, a side of veggies, or a fresh green salad.
