Night 6 of the 10 Dinners for $10 or less Challenge is a favorite camping meal of ours. It’s also been the cheapest meal of any night so far.
Kielbasa, cabbage, onion, potatoes and corn all fried together in one pan, in stages. Potatoes first, then Kielbasa, then onion, corn and cabbage last as I prefer it still with a bite to it. Cooked with seasonings and butter, fed a family of 4!

Campfire Skillet Delight

Ingredients:

  • 1 pound kielbasa, sliced into rounds
  • 4 medium-sized potatoes, diced
  • 1 small head of cabbage, thinly sliced
  • 1 large onion, finely chopped
  • 2 cups fresh or frozen corn kernels
  • 4 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Cooking spray or oil for the pan

Instructions:

  1. Prepare the Campfire:
    • Set up a campfire or camping stove with a sturdy cooking surface. Ensure you have a cast-iron skillet or a durable pan suitable for outdoor cooking.
  2. Cooking in Stages:
    • Potatoes: Heat the skillet over medium-high heat, add a tablespoon of butter, and sauté the diced potatoes until golden brown and cooked through. Season with salt, pepper, and half of the garlic powder. Transfer the potatoes to a plate and set aside.
    • Kielbasa: In the same skillet, add another tablespoon of butter, then cook the kielbasa rounds until they are nicely browned on both sides. Remove them from the skillet and set aside with the potatoes.
    • Onion: Add a bit more butter to the skillet if needed, then sauté the chopped onion until translucent. Season with salt, pepper, and the remaining garlic powder.
    • Corn and Cabbage: Incorporate the corn into the skillet, followed by the thinly sliced cabbage. Add paprika and thyme, and stir well. Cook until the cabbage is tender but still has a slight crunch.
  3. Combine and Finish:
    • Reintroduce the cooked potatoes and kielbasa back into the skillet with the corn and cabbage mixture. Stir everything together, ensuring the flavors meld.
    • Add the remaining butter and adjust the seasoning if necessary. Cook for an additional 2-3 minutes until all ingredients are well combined and heated through.
  4. Serve:
    • Dish out generous portions into plates or bowls. Enjoy your campfire skillet delight under the stars with your family!
