Smoked Chuck Roast Sandwich with Melty Cheese
Ingredients:
- 1 chuck roast (about 3-4 pounds)
- Mesquite seasoning (or your favorite barbecue rub)
- 4 cups beef broth
- 1/4 cup Worcestershire sauce
- 2 onions, sliced
- 2 teaspoons garlic powder
- Salt and pepper to taste
- Slices of bread (your preference)
- Mayonnaise
- Provolone cheese slices
- Shredded pepper jack cheese
Instructions:
- Prepare and Smoke the Chuck Roast:
- Rub the chuck roast generously with mesquite seasoning or your preferred barbecue rub. Let it sit for about 30 minutes to allow the flavors to penetrate.
- Preheat your smoker to 225°F (107°C). Place the seasoned chuck roast on the smoker and let it smoke for about 3 hours, or until it reaches an internal temperature of 160°F (71°C).
- Simmer in Flavorful Broth:
- Transfer the smoked chuck roast to a large pot or Dutch oven.
- Add beef broth, Worcestershire sauce, sliced onions, garlic powder, salt, and pepper to the pot.
- Bring the mixture to a simmer over medium-low heat. Cover and let it simmer for about 6 hours, or until the meat is tender and easily shreds with a fork.
- Prepare the Sandwich:
- Once the chuck roast is cooked, remove it from the pot and shred the meat along with the onions using two forks.
- Preheat your broiler.
- Toast slices of bread until golden brown.
- Spread mayonnaise on one side of each slice of bread.
- On half of the slices, layer provolone cheese slices, followed by the shredded chuck roast and onions, and top with shredded pepper jack cheese.
- On the other half of the slices, layer provolone cheese slices, followed by shredded pepper jack cheese.
- Place all the assembled sandwiches on a baking sheet and broil for a few minutes, until the cheese is melted and bubbly.
- Assemble and Serve:
- Remove the sandwiches from the broiler and carefully place the slices together to form sandwiches.
- Slice the sandwiches diagonally and serve hot.
