Red Velvet Cake with Cream Cheese Frosting Recipe

Ingredients
For the Cake:
2 ½ cups all-purpose flour
1 ½ cups granulated sugar
1 teaspoon baking soda
1 teaspoon cocoa powder
1 teaspoon salt
2 large eggs, room temperature
1 ½ cups vegetable oil
1 cup buttermilk, room temperature
2 tablespoons red food coloring
1 teaspoon vanilla extract
1 teaspoon white vinegar
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
1 pinch salt
Instructions
1. Prepare the Cake Batter:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
Combine Wet Ingredients: In a large bowl, beat the eggs. Add in the oil, buttermilk, red food coloring, vanilla extract, and white vinegar, mixing well to combine.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
2. Bake the Cakes:
Divide Batter and Bake: Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool Cakes: Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer them to a wire rack to cool completely.
3. Prepare the Cream Cheese Frosting:
Beat Cream Cheese and Butter: In a large mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.
Add Powdered Sugar and Vanilla: Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the vanilla extract and a pinch of salt, and continue to beat until the frosting is light and fluffy.
4. Assemble the Cake:
Level Cakes: If needed, use a serrated knife to level the tops of the cakes.
Frost the Cake: Place one cake layer on a serving plate or cake stand. Spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
5. Serve and Enjoy:
Decorate: If desired, garnish the cake with additional decorations such as red velvet crumbs, chocolate shavings, or fresh berries.
