Just heat your oil up to 350, make your batter and pour into a funnel, fry until golden brown. Add your preferred toppings and done!
Funnel Cakes with Box Pancake Mix
Ingredients:
- 2 cups pancake mix (store-bought or homemade)
- 1 1/2 cups milk
- 1 large egg
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
- Toppings of your choice (e.g., whipped cream, chocolate sauce, berries)
Instructions:
- Prepare the Funnel Cake Batter:
- In a large mixing bowl, combine the pancake mix, milk, egg, and vanilla extract.
- Whisk the ingredients together until you have a smooth batter. The consistency should be thick enough to coat the back of a spoon but still pourable.
- Heat the Oil:
- Pour enough vegetable oil into a deep, heavy-bottomed pot to reach a depth of about 2 inches.
- Heat the oil to 350°F (175°C). Use a candy or deep-fry thermometer to monitor the temperature.
- Fill the Funnel:
- Pour the batter into a funnel, covering the bottom opening with your finger to prevent the batter from flowing out.
- Hold the funnel over the hot oil and release your finger, moving the funnel in a circular motion to create a lacy pattern as the batter flows into the oil.
- Fry Until Golden Brown:
- Fry the funnel cake for about 1-2 minutes on each side, or until it turns a golden brown color.
- Use a slotted spoon to carefully flip the funnel cake to ensure both sides are evenly cooked.
- Drain and Dust:
- Once golden brown, use a slotted spoon to remove the funnel cake from the hot oil.
- Place the funnel cake on a plate lined with paper towels to absorb excess oil.
- Dust the funnel cake generously with powdered sugar.
- Add Toppings:
- Customize your funnel cake with your favorite toppings. Some popular choices include whipped cream, chocolate sauce, caramel drizzle, fresh berries, or even a scoop of ice cream.
- Serve and Enjoy:
- Serve the funnel cake immediately while it’s still warm and crispy.
