Cheeseburger soup
Ingredients:
– 1 pound ground beef
– 1 onion, chopped
– 1 clove garlic, minced
– 1 cup carrots, diced
– 1 cup celery, diced
– 4 cups chicken broth
– 4 cups potatoes, peeled and diced
– 1/4 cup flour
– 2 cups milk
– 2 cups shredded cheddar cheese
– Salt and pepper to taste
– Optional toppings: crumbled bacon, chopped green onions
Instructions:
1. In a large pot, brown the ground beef with the onion and garlic until cooked through.
2. Add in the carrots, celery, chicken broth, and potatoes. Bring to a simmer and cook until the potatoes are tender.
3. In a separate bowl, mix the flour with a bit of milk to create a slurry. Slowly stir in the remaining milk until smooth.
4. Pour the milk mixture into the soup and bring to a boil, stirring constantly until thickened.
5. Reduce heat and stir in the cheddar cheese until melted. Season with salt and pepper.
6. Serve hot with optional toppings like crumbled bacon and chopped green onions
