Creamy Tortellini Crockpot Delight
Ingredients:
- 1 bag (around 20 oz) of frozen tortellini
- 1 can (14.5 oz) of diced tomatoes
- 1 box (32 oz) of chicken stock
- 2 blocks (8 oz each) of cream cheese, softened
- 1 lb of ground beef (or any other meat of your choice)
- 2 cups of fresh spinach, roughly chopped
- Salt and pepper to taste
- Optional: grated Parmesan cheese for serving
Instructions:
- Prepare the Meat: Cook the ground beef in a skillet over medium heat until browned and fully cooked. Drain any excess fat and set aside.
- Combine Ingredients in Crockpot: Place the frozen tortellini, diced tomatoes, chicken stock, softened cream cheese, and cooked ground beef in the crockpot. Stir gently to combine all ingredients.
- Add Spinach: Sprinkle the chopped spinach over the top of the mixture in the crockpot.
- Season: Season with salt and pepper according to your taste preferences.
- Cook: Cover the crockpot and cook on high for 4 hours, or until the tortellini is tender and the flavors have melded together.
- Serve: Once cooked, stir the contents of the crockpot to combine everything evenly. Ladle the creamy tortellini mixture into bowls and garnish with grated Parmesan cheese if desired.
